Yet another birthday has come and gone. And while last year I was rebellious and decided to celebrate with and overdose of nutella in my birthday party dessert, (as is proper in any birthday party, anywhere, ever) this year I indulged instead in a mile high cake. Because I’m piling on the years, I figured it’s only fitting to pile on the size of the cake. This cake, with it’s polished and big look, has many steps to it, but it’s actually very easy and quick to make, (compared to other -cup- cakes I’ve made) so it was a great choice for a hectic day, in which I ran all across the city since morning and only started to prepare a full make your own grilled cheese bar about 1 hour before the guests arrived. My lateness, and the unpredictable may weather, resulted in what looked very much like an english tea party, instead of lunch. But who’s complaining? Quick and yummy – Lime and black sesame cream cake

Let me let you in on a little secret: my aunt makes the meanest margaritas out there. Her recipe, involving almost equal parts tequila, cointreau and sugar  is extremely popular with all guests, young and old, male and female. They’re incredibly yummy, and as I’ve already told you the alcohol ratio you might have guessed, also incredibly fun. So my mom had the brilliant idea to serve tons of margaritas during the wedding weekend and so proceeded to buy 35 kilos of limes. I’m not joking. Or exaggerating. She actually had 35 kilos of limes. Limes pack a punch. And so there’s absolutely no way she could’ve used all 35 kilos in three days… which means that we still have a fridge full of limes, even though I’ve had a party (in which I of course served margaritas) and baked two cakes involving limes since then. There’s just no way to go through them all! So I’m sharing with you one of the recipes that’s helping me put a dent in the never ending supply of limes around here: Lime and black sesame cream cake. It’s yummy, quick and not so heavy.  A dense texture but a light flavor, the sort that you use your fork to get together all the last crumbs in your plate. Topped with a simple lime-icing sugar glaze, it manages to use a grand total of 9 limes! (Which means if I bake about 55 of these I might finally finish the job before they go sour).  If you like sightly less sweet or for a more simple go-with-your-coffee look and taste, skip the icing and just dust it with a bit of icing sugar. Grown up kids – Oreo and peanut butter cupcakes

When I was an annoying pre-teen my diet consisted solely of quesadillas and oreos. It’s true, there was a time in the life of this foodie where I totally missed out on one my favorite things in life; eating. I do have to say though, in defense of quesadillas and oreos, they are both incredibly good. I’m pretty sure there aren’t many mexicans out there who’ll deny the deliciousness of cheese, tortillas and salsa. And what can I say about oreos? If you don’t like them, there’s probably something severely wrong with you. Like get-your-butt-to-the-doctor-wrong. Especially if the wonderful cookie sandwiches come accompanied by peanut butter and a tall glass of cold milk. Am I right? Peanut butter and oreos is the ultimate pre-teen combo…and teen, and young adult, and adult and senior. Because it never gets old. At least for me it will always be one of those childhood flavors that I will never outgrow.
And so were born these oreo cupcakes (and cake!)….stuffed with cookies and topped with a not too sweet, melt in your mouth peanut butter frosting. Also topped with more oreos, because you can’t have too many of those. I actually made these for a co-worker who recently left our office and who needed something to remember us by, and what better way than using an already full of memories combination of flavors?Read more for the recipe! Late Christmas snippet – Red velvet snowmen cake pops

Warning: This isn’t a real post. It’s even a whole month late. It’s just a snapshot of the only thing I was able to photograph (foodwise) during Christmas. It was so hectic and I had so many things to cook/get done that I didn’t have anytime to blog about it! But anyway, here’s a little snapshot of the red velvet snowmen cake pops that I made for dinner. (The ones my dog didn’t eat it….because he got his paws on about 6 of them and then proceeded to let us know how good they were by throwing up red cake all over my house. Oh yay!)
There’s no recipe for this post because they’re just regular red velvet cake pops (recipes abound all over the internet, but if you want to go quick and easy, check out Bakerella’s) covered in white chocolate. For the nose I used red marzipan, an oreo and a chocolate covered marshmallow for the hat, and dark chocolate for the eyes and mouth.

Insanely sweet – Tres leches and strawberry cake

This post contains what I’m just going to go ahead and without any research or authority on the subject, call Mexico’s favorite cake. While it’s not strictly Mexican (I know it’s also out there in other latin american countries, also probably a favorite) it is an incredibly  mexican flavor for me, because it’s one of those things that you eat in traditional restaurants, in pueblitos, or at your grandmother’s house when your family gets together. And I’m not singing its praises just because its traditional… oh no. Not in the slightest. How could I not talk up the spongiest of sponge cakes that’s thoroughly imbibed in all the variants of sweet milks out there? Because that’s exactly what this cake is, tres leches, meaning three milks. Condensed milk? Yes please. Evaporated milk? Yes please. Table cream? Um, also yes. Top it all with chantilly? Too much cream you say? No. That is absolutely impossible! Especially if you have bits of fresh strawberries all over. Trust me on this, it sounds insanely sweet, but what did you think the first time someone told you to dip your oreos in peanut butter? Aha. Thought so.
This cake is the kind of cake you don’t eat as often you’d like… because it takes a bit of work. But the texture, and flavor, and insanely sweet goodness are absolutely worth it.  Note: The pictures here are for three-layered mini cakes, because I’m crazy like that, but the recipe is for a regular, two layer cake. (Trust me, you’ll want to go for the easier one-cake bit unless you’re insane like me).
